About

Join chef Meloni Courtway in celebrating summer with perfectly timed French summer galettes. Galettes are a rustic, pan-free pie originating from France. 

Students in this course will master pâte brisée (traditional French all-butter pie dough), make a savory squash galette, and a seasonal fruit galette to take home and bake or freeze. We will taste-test samples of our galettes made in class. 

That’s three recipes in one class, and many moments of fun. 

On the menu:

  • Pate brisee
  • Onion and Zucchini Galette
  • Seasonal berry or stone fruit galette

Chef Courtway has over 25 years of pastry experience and delights in teaching the wonders of dough. 

Details

BARN’s kitchen facility regularly uses ingredients on the FDA’s major allergens list. This class uses milk (butter), eggs, and wheat.

Materials

A $10 materials fee, included in the cost of the class, covers all the ingredients you'll need.

Class Policies

  • Ages 14 and up are welcome.
  • Closed-toe shoes are required in the studio.
  • Tie back long hair.

Meloni Courtway

Meloni is a professionally trained chef, published food writer and a culinary teacher at Bainbridge High School. As owner of Courtway Catering, a small-event company dedicated to making cooking skills and team building part of every kitchen, she has taught home classes and large-scale farm workshops. She has written for Gannett and New York Times publications, and was one of the first paid food bloggers for the New York Times. Meloni loves working with kids and adults as they explore their own power and capabilities in the kitchen. She also loves pie.
